This sweet potato ginger bake is a yummy way to use dehydrated or fresh sweet potatoes.  I just kinda put this recipe together the other day when I was trying to find something to make for dinner that would wake up the taste buds.  I wanted to make sweet potatoes but I wanted something a little different too, maybe a little spicy.  This recipe did it. 

 Here is what you will need:

2 - 3 Med Sweet Potatoes (fresh or equiv. dried.  If you use dried add a little more milk)

1/2 c. Milk

1/2 tsp. Cinnamon

1/4 c. packed brown sugar

1 - 2 Tbsp chopped ginger (you can used candied ginger if you like.)

A baking dish - I used a Pyrex baking dish with a lid


Preheat your oven to 375 degrees

If using fresh sweet potatoes peel and slice them.  Place the sweet potatoes in the baking dish and set aside.  In a small bowl whisk together the milk, cinnamon and brown sugar.  Once the brown sugar is pretty well dissolved add the chopped ginger and pour over the sweet potatoes in the baking dish.

Cover the baking dish and bake for about 20 - 25 minutes covered.  Remove cover and bake another 20 minutes.  When the sweet potatoes are fork tender the dish is ready.  Remove from oven and let set for about 5 minutes.  Now it's ready to serve!

This dish provides a mouthful of flavors from sweet to spicy.  My family said it was a definitely keeper.
